Leaving the bone in any cut of meat regardless of the animal enhances flavor during the cooking process.  Pork is no exception. Pork butt and pork shoulder are in close proximity on the pig and can be used somewhat interchangeably. Both of these cuts of pork can be used to make pulled pork. The shoulder and the butt are two different cuts of meat, although they do come from the same general area on the hog.

Pork butt is a cut of meat from the shoulder of the pig. Pork butt is the cut most typically used in pulled pork. It can be roasted or cut into steaks, but it is also well-suited for braising and stewing or for making ground pork or sausages.
