Hash brown eggs first began to appear on New York City breakfast menus in the late 1800s and have been a breakfast diner staple across America ever since. The full name of the dish, hashed brown potatoes, was first mentioned in the 1887 publication of "Kitchen Companion" by American food writer Maria Parloa.
