Goat Products
Goat meat from adult goats is called chevon or mutton, while young goats are referred to as cabrito, capretto, or kid. Goat meat continues to gain popularity in America, Northern Europe and Canada in recent years. Ribs, tenderloin and goat loin are great for quick meals while other cuts are best for slow cooking or braising. Although goat meat is classified as a red meat, it is leaner and contains less fat and cholesterol than both lamb and beef, and less energy than chicken. Use low and slow cooking methods (slow cooking over low heat) to guarantee tenderness and moisture retention in your goat dishes.

Pork Products
Pork is a great source of such vitamins and minerals as phosphorus, selenium, and thiamine. Pork is actually richer in thiamine, a B vitamin that is necessary for a range of bodily functions, than other red meats such as beef and lamb.
Pork Chorizo Sausage
Pork Chorizo Sausage is a highly seasoned chopped or ground pork sausage used in Spanish and Mexican cuisine. Mexican chorizo is made with raw, uncooked pork, while the Spanish version is usually made of smoked pork. Chorizo is spicy. The Mexican version is typically seasoned with vinegar and chile peppers. Spanish chorizo is made with garlic and Spanish smoked paprika – which can be either sweet or hot. Great for chili, tacos and pasta dishes – it’s one of our favorite sausage flavors!

Boneless Pork Chops
Boneless Pork Chops are a lean cut and a great option to chop whole or slice thin for stir fry. Boneless pork chops are the same meat as the rib-cut pork chop, but the bone and excess fat has been removed. Since these chops are trimmed and ready to cook, they’re perfect for quick weeknight dinners.
Bone-in Shoulder Roast

Fresh Ham Steak
Fresh Ham Steak is the perfect ingredient when you want to use your own brine recipe. Ham steak is a thick slice cut from a whole roast of ham, either bone-in or with the bone already removed. Ham steaks are a perfect solution for that ham craving when it strikes, but you don’t have enough people at the dinner table for an entire roast of ham.
Bone-in Butt Roast
Leaving the bone in any cut of meat regardless of the animal enhances flavor during the cooking process. Pork is no exception. Pork butt and pork shoulder are in close proximity on the pig and can be used somewhat interchangeably. Both of these cuts of pork can be used to make pulled pork. The shoulder and the butt are two different cuts of meat, although they do come from the same general area on the hog.
Pork Spare RIbs
Pork Spare Ribs are different from baby back ribs, which come from near the backbone of a pig. One side of the spare ribs has exposed bone, where they meet the baby backs. The other side, near the breast bone, is where the rib tips are located. The rib tips are a flap of meat that has some small bones and cartilage in it. BBQ Spare Ribs from our heritage pigs can be grilled up and be served full of flavor. Compared to baby backs, spare ribs have more meat between the bones and less meat on top. The meat on spare ribs generally has more marbling and more flavor.

The primary difference between hot and mild is how many red pepper flakes are included when it’s being made.
