Dandelion Leaf Salad is a nutrient-dense side dish that contains high levels of vitamins A, K, and C and is a moderate source of potassium, iron, magnesium and calcium.
Ingredients
- 1 TB extra virgin olive oil
- 1/2 lemon, juiced
- 2 tsp raw honey
- 1 tsp chopped garlic
- salt and pepper to taste
- 2 cups dandelion leaves rinsed, dried, roughly chopped
- a few dandelion flowers rinsed, air-dried
- orange peel optional for garnish
Instructions
- For the dressing whisk the oil, lemon juice, honey, garlic, salt, and pepper in a small mixing bowl. Adjust salt and pepper to taste.
- Place the dandelion greens in a bowl add the dressing toss to combine. Garnish with orange peel and flowers.
