Dandelion Leaf Salad

Dandelion Leaf Salad is a nutrient-dense side dish that contains high levels of vitamins A, K, and C and is a moderate source of potassium, iron, magnesium and calcium.

Ingredients
  

  • 1 TB extra virgin olive oil
  • 1/2 lemon, juiced
  • 2 tsp raw honey
  • 1 tsp chopped garlic
  • salt and pepper to taste
  • 2 cups dandelion leaves rinsed, dried, roughly chopped
  • a few dandelion flowers rinsed, air-dried
  • orange peel optional for garnish

Instructions
 

  • For the dressing whisk the oil, lemon juice, honey, garlic, salt, and pepper in a small mixing bowl. Adjust salt and pepper to taste.
  • Place the dandelion greens in a bowl add the dressing toss to combine. Garnish with orange peel and flowers.
